Last weekend was our first weekend in the house with NO PLANS! I repeat, NO PLANS! That really doesn’t happen too often, so we soaked it in alllll weekend long with a lot of much needed sleep (Chris literally slept the entire weekend per my Instastory), lounging, cleaning, organizing and meal prepping! Lately we have been so busy that meal prep has not even been an option, but we are finally getting settled and into our new routine.
Sunday is by far my favorite day of the week – a fresh start – getting ready for the week ahead excites me! And Billions comes on, so that’s a win in my book. Just typing that, I have realized that Sunday Funday has taken on a whole new meaning for me. Whatever, I’m owning it.
So, one of my favorite things to make on Meal Prep Sunday are these Peanut Butter Protein Bites. I saw this recipe on Angelike Norrie’s Instagram page (@angelikenorrie) and knew I had to try them! I tweaked the recipe a bit, my version is below. Also, most of these ingredients are probably things you already have on hand.
These protein bites are so easy and DELICIOUS! Prep time is about 10 minutes. They are the perfect pre-and post-workout snack as well.
- 1/2 cup peanut butter
- 1/4 cup rolled oats
- 1/3 cup raw honey
- 1/2 cup unsweetened coconut flakes
- Handful of chocolate chips
- 2 scoops of vanilla protein powder (I use Muscletech/Nitro Tech Whey Gold)
- Dash of vanilla extract
- 1-2 teaspoons of water, until it gets to a good mixing consistency.
- Lastly, the finisher: Sprinkle rolled balls with chia seeds and unsweetened coconut flakes
- Mix all ingredients in a bowl.
- Roll into balls.
- Refrigerate for 1 hour, then ENJOY!
